WALLEYE (Domestic)

CLASS: Aclinoplerygil (Ray-finned fish)
LATIN NAME: Sander vitreum
PHYSICAL APPEARANCE
Sharp canine teeth
Wall-eyed -prominent glassy eyes
Olive & gold with light underside
Weight up to 25 lb.
TEXTURE AND TASTE
Walleye  is almost boneless and has lean, tender, but still very firm meat
with a sweet, subtle flavour.

 PIKEPERCH (European)

Also known as Euro Walleye, Zander 

FAMILY: Percidae (Perches)
ORDER: Perciformes (perch-like)
CLASS: Aclinoplerygil (Ray-finned fish)
LATIN NAME: Sander lucioperca 
PHYSICAL APPEARANCE
Sharp canine teeth
Wall-eyed -prominent glassy eyes
Transverse dark bands, on olive/gold body
Weight up to 25 lb.- can reach up to 40 lb
TASTE & TEXTURE
Pikeperch/Zander  is almost boneless and has lean, tender, but still very firm meat with a sweet, subtle flavour.
NO FISHY TASTE
 

 

 

INTERESTING FACT:  
In 2004, the FDA investigated restaurants in Minnesota who were serving Pikeperch/Zander and calling it Walleye. The taste and fillet appearance was so similar, it took DNA testing to be able to differentiate between the two!

YELLOW PERCH (Domestic)

Also known as LAKE PERCH, YELLOW LAKE PERCH

LATIN NAME: Perca flavescens

 PHYSICAL APPEARANCE

 5-9 dark vertical stripes which fade near the cream-coloured belly

Gold or yellow with laterally compressed body with an oval, oblong shape

Adult sizes typically range from 3.5”–11”

 TASTE AND TEXTURE

Fresh yellow perch has moist, translucent, pink flesh with no fishy odor. Cooked, the lean meat is white, with a mild, sweet flavor and firm but flaky texture
